Audio visual DJ, Sampology has been rolling around  Australasia  as part of his AV Stimulation tour . Globally recognised as one of the best audio visual DJs of our time, Brisbane native Sampology  has been on the road promoting his current single ‘Dancehall Queen’, in which he collaborated with DJ Butcher and Grammy Award winning vocalist Beenie Man. The tour kicked off in Bali where Sampology played alongside John Legend.

We caught up with Sampology to chat birthday cakes on riders, dinner parties and tour van and aeroplane munchies.

What were your food influences when you were growing up and what kind of food did you eat at home or with your family?

My dad is a really great cook – he is half Northern Italian, so his Mother taught him lots of great dishes. (Even though she was Irish) When I was growing up he was always making all different cuisines with multiple courses. His signature dish is a Pealla, which he has a custom pan for that can serve about 30 people.

What are your favourite tour van/plane munchies?

I’m cheap so I usually board the plane via the Virgin Lounge and steal either their passion fruit cookies, cheese toasties (add boiled egg & relish in the mornings) or a pocket full of nougat.

What type of food do you hate, and what is the most disgusting thing you’ve ever eaten?

I’m open to eating pretty much anything, I can’t think of anything horrible but it’s always a shame when you get a really nice bit of meat someone has wrecked by cooking it wrong.

What type of food do you make sure to avoid before a gig or going on stage?

Seafood/ creamy/ super spicy foods.

Imagine for a second you can request anything on your rider for your Stimulation tour. What food and drinks would you put on it?

A birthday cake with Christopher Walken’s face that serves 50 people, + 10 litres of L&P.

What has been your biggest cooking disaster to date? Tell us the story.

Making a beautiful big salad and then accidentally adding soya sauce instead of balsamic vinegar.

If you were throwing a dinner party and could invite any musicians, living or dead, who would they be and why?

?uestlove – because that dude knows how to music geek talk great.
Chaka Khan – because aint nobody does it better.
Marvin Gaye – because of awkward tension with the next person.
Pharell – to explain why he thinks ‘Gotta Give It Up’ and ‘Blurred Lines’ sound ‘nothing alike’ (Also because he’s an amazing creator)
Larry Levan – to ask him out of today’s music, what would he want to share with people the most.
Bobby Caldwell – because I just realised everyone above is Black, not specifically sure why I feel funny about that though..  also he’s my favorite blue eyed soul singer.

Where’s your favorite music venue to eat at anywhere in the world? Tell us where and why.

The Dip at Goodgod Small Club in Sydney because Lev Dawg.

What music do you like to play when you’re cooking?

strictly: “Smooth Operator” – Sade

What is one meal you could not live without?

Indomie Mi Goreng noodles, I cook it at home during the week whenever I’m short of time, which is pretty much every day. It’s my staple home studio eats & I always pimp it out with extra veggies, chicken, chilli + egg on top.
