What were your food influences when you were growing up and what kind of food did you eat at home or with your family?
My mom was macrobiotic for awhile when I was little. She would always put seaweed in stuff. But in weird ways – like in mac n cheese. I think she thought it would make it healthier.
What dish or cuisine do you most like to eat on tour and why?
Whatever is local or the specialty. Tour is kinda just an excuse to be a food tourist.
What type of food do you hate, and what is the most disgusting thing you’ve ever eaten?
I like to think ill try anything at least once. I tried whole baby octopus at dim-sum once. The heads kinda popped in your mouth…
What type of food do you make sure to avoid before a gig or going on stage?
Anything spicy. Also, when I first started playing in bands, a more experienced friend told me he had a rule for not eating for 2 hours before a show. I’ve followed it ever since.
Imagine for a second you can request anything on your rider at a gig. What food do you put on it?
What has been your biggest cooking disaster to date?
I worked at a restaurant that was catering a wedding for one of the owners friends. The day of the wedding, the owner was nowhere to be found. We went ahead as planned, but without him, everything was a mess at the location of the reception. We were understaffed and guests were hopping up to help bar tend. We learned later that one of these volunteer bartenders was a food critic at the NY times. The restaurant owner eventually showed up, and it turned out he had spent the night in jail after getting in a fight with the chef who had quit the day before. Luckily we got dinner out and everyone had a great time!
When you tour overseas, what food from home do you miss the most?
This is your last day on earth, what is your final meal?
Chicken Pad Gra Pow Gai
- Stir-fry garlic & shallots in hot oil until aromatic
- Add chicken and brown.
- Add long beans.
- When long beans are almost al dente, stir in the chilies, kaffir lime leaves & soy sauce.
- Add fresh basil leaves and fish sauce to taste. Stir and mix well. Stir-fry another half a minute, or until the basil is wilted and the chicken is cooked through.
- Sprinkle with white pepper and serve with steamed rice.
