Big Day Outʼs ʻCulinary Outlawsʼ, Ben Milgate and  Elvis Abrahanowicz of  Porteno have secured a line up of some of the hottest, spiciest and tastiest names in Australian food to become a part of the inaugural Chow Town at Big Day Out! Launching at the Sydney Big Day Out, Ben and Elvis have put together a delicious mouth watering menu which includes: BBQ Wagyu Beef Brisket w/ Old Bay Coleslaw on a brewski bun & 16 hour Chipotle Chili Pulled Pork w/ Pickle, Old Bay Coleslaw on a brewski bun.

We caught up with Ben & Elvis ahead of the Big Day Out to chat all things cooking & music.

What were your food influences when you were growing up and what kind of food did you eat at home or with your family?

Elvis – I grew up in Argentina so it goes with out saying that we ate a lot of BBQ’s

Ben – I grew up in Australia so I at a lot of meat and 3 veg

What inspired you to start cooking?

Ben –  It seemed like a good option when I left school and my Grandmother always inspired me too

Elvis – I didn’t know what else to do, I loved cooking and so it seemed like an obvious place to start.

Both – we both love eating more than we do cooking.

What do you think is the relationship between food and music?

They go hand in hand for good times, always.

How are you going to make your restaurant meals festival friendly for Bid Day Out punters?

It’s going to be hand held, fast, affordable but most of all tasty!

What type of food would you avoid putting on your festival menu?

Fancy/tricky chef tweezer food

If you could cook for any musician in the world who would it be and why?

Dan from the Black Keys, he’s a cool guy and loves his food, he’ll try anything you give him, we get to cook for him when he comes to town.

Do you have any cooking disaster stories? How about any festival disaster stories?

We both have millions of cooking disasters but that’s how you become a cracking chef, no festival disasters YET!

If the tables were turned and you were a rockstar, what food would you want on your rider?

In & Out burger and a bottle of Jack Daniels

Finally, if you could design a dish inspired by of the 2013 Big Day Out artists, who would the artist be, what would the dish be, and why?

It’s difficult to design a dish for a band as it’s a mix of people with seemingly different tastes and you’d only be stereotyping if you tried. We, and all the chefs involved have designed our dishes for the 2013 BDO based on what we like, what we think the punters will like and what is appropriate to eat for the festival.
